Spinach Egg White Wraps
I’ve been purchasing egg wraps from Costco and Sprouts and love them for many things: from sandwich wraps to sliced up and cooked as noodles so I can enjoy keto pasta with my family. But sometimes they are out of stock and other times, I want them and I’m not going to the store anytime soon. So, I tried to whip up my own and now they’ve become a staple to my weekly meal planning. And now you can too. Here’s how to make them.
8 eggs
1/2 cup egg It’s Just Egg White Protein powder (linked to buy on Amazon)
1/2 cup chopped frozen spinach
1/2 tsp of Redmond Real Salt and to taste, (linked to buy on Amazon)
Butter, for pan
Combine eggs, egg white powder, chopped frozen spinach, and salt in blender. Blend until smooth. You may need to scrape down the sides to make sure most of the egg white powder is combined.
Heat a skillet over medium-high heat. Add butter until melted. Pour in just enough batter to coat the bottom of the pan and swirl pan so that it forms an even layer. Cook until the batter is just set and the edges are cooked. Flip and cook just 15-20 seconds longer. Remove from pan.
This recipe yields approximately 6-8 wraps, depending on the size of the pan and the thickness of the wrap.
