Spinach Artichoke Chile Dip

This is some amazing dip. I am currently following a pretty strict keto (high fat, low carb) way of eating and this makes the cut. The artichokes can be high in sugars, so you can cut those out if you are just starting keto, however, I'm at a steady point where I don't mind a few artichokes here and there. 

This is some amazing dip. I am currently following a pretty strict keto (high fat, low carb) way of eating and this makes the cut. The artichokes can be high in sugars, so you can cut those out if you are just starting keto, however, I'm at a steady point where I don't mind a few artichokes here and there. 

Ingredients:

1 cup sharp cheddar, shredded

5 oz frozen spinach, thawed and chopped

6 oz artichoke hearts, chopped

4 oz can Hatch Green Chiles

1/3 cup sour cream

1/2 cup cream cheese

1/3 cup homemade mayonnaise

2 cloves garlic, minced

 

Preheat oven to 375 degrees. Mix together cheddar cheese, spinach, artichoke hearts, and green chiles. Add the remaining ingredients and mix well. 

Bake for 20-30 minutes until browning and bubbling on top.

Serve with pork rinds (keto), tortilla chips, or bell pepper spears. Serves 6.
